The Easiest Vegan Pancakes

Everyone loves pancakes, that’s just a fact of life. But imagine if you could make pancakes completely cruelty free, with a few less calories than the regular versions and they tasted just as good. Oh wait, you can. Let me show you how.

The Easiest Vegan Pancakes

Ingredients you’ll need:

  • 1 cup flour of your choice
  • 5 tablespoons brown sugar
  • 2 tablespoons baking powder
  • 1/8 teaspoon salt
  • 1 cup non-dairy milk (I used soy)
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • food colouring (optional)

How to make the pancakes:

  1. Sieve the flour and baking powder
  2. Combine all the dry ingredients in a mixing bowl
  3. Combine the wet ingredients in a measuring cup
  4. Slowly add the wet mix to the dry mix and whisk until smooth
  5. On medium heat, heat a pan with a bit of vegetable oil (I found it had a better outcome than using butter)
  6. Ladle your mixture into the hot pan, when you see bubbles start to come up that’s when you know it’s time to flip your pancakes over
  7. Stack your pancakes onto your plate

How to make a Berry Compote (optional):

  1. Heat a pot over medium heat
  2. In about 1 cup of water, add about a 1/2 cup of mixed frozen berries
  3. Add 2 tablespoons brown sugar and stir it all together
  4. Let it cook until the mixture has thickened
  5. serve on top of your delicious pancakes
